What information do I need to prove my income to a mediator for child support?
I own my own cleaning business. My clients give me checks and some cash. How do I show this income? I also have last years w-2 from a fast food joint that I worked at but I don’t work there any more. Will they count the income from last year?
That is the best evidence of your earning potential. Get a job, so you can show that your income now is far less, you will have check stubs, that may be a better strategy.

Even if you own a business, you still have to keep payroll records. You should be issuing receipts or invoices every time you receive payment. If you haven’t done that and you have no proof of income, then you don’t really own a business.

Typically the court will ask for your last 3 paychecks. If you do not have paychecks because you get a percentage from what you clean, they will ask for your last 3 years of tax papers, i.e. what you filed to get your federal tax and your state tax refund. This will let them see about what your earning potential has been.
If none of those fit what you are actually doing you can always ask the court to impune minimum wage at 40 hours a week to you. Min. wage is $7.25 per hour.
